(Hyssopus officinalis) Used as early as the 7th century to improve the smell of kitchens and hospitals. Hyssop leaves are used to flavor salads, soups, liqueurs, and stews. Essential oil used in perfumes. Attracts bees, butterflies, and hummingbirds.
